Today’s tomatoes are less tasty than their forebears, and the reason is genetic: we prefer that tomatoes look uniformly red and ripe, but unfortunately, that gene conflicts with good taste.
Here at Tomato Headquarters, we do our best and buy only vine-ripened tomatoes, and once a summer, we get a visit from John Kuhner from Wildcat Mountain Organic, who brings with him all kinds of interesting cultivars. They don’t look as pretty, but the taste… Five tomatoes!
