Beecher’s Handmade Cheese – Seattle Wash.

It was a must. My Production Coordinator and I just looked at each other and walked in the door – we knew. The pungent aroma filled my senses. We made our way through the crowd, past the in-house cheese making facility to the gourmet cheese counter. We tried several samples including: 4-Year Aged Flagship and the Chipotle Pepper Curds. Beecher’s first cheese “The Flagship” is a semi-hard cow’s milk cheese with a uniquely boisterous, nutty flavor. The curds… seasoned with olive oil, lemon juice, chipotle peppers and cilantro – its spicy and great for snacking. Both are alluring! After much thought, for lunch we decide on Beecher’s famous Mac & Cheese and we split a grilled cheese (made with Flagship, tomato and basil). The Mac & Cheese is arranged with award winning, one-year aged Flagship and Just Jack Cheese. This Gourmet Mac & Cheese “World’s Best” is not just for kids. Its a sophisticated dish.

The store was crowded so we decide to take our treasures to the waterfront and eat there. I was so anxious I practically dragged Melissa across the street into traffic. Sorry Melissa. Our meal was exceptional. I enjoyed every creamy hot bite of the Mac & Cheese. I was wishing we purchased the large – but much eating had to be done so we wanted to limit ourselves as it was only lunch time. The grilled cheese was more like a hot panini. The bread was buttery  and crispy. The tomato to cheese ratio was perfetto. Beecher’s Handmade Cheese Shop….. I can’t even!
